Wildflower Brewing & Blending Field Work: Rosella Wheat

A complex Brett Beer showcasing the unique character of Rosella wheat after fifteen months in ex-wine oak. The sensory profile is defined by a savory, spiced biscuit foundation and a honey-like graininess inherent to the heritage wheat variety. Aromatics of spiced pineapple, ripe apricot, and pear are layered over earthy, funky undertones typical of a mature mixed culture. On the palate, a delicate citrus brightness complements the grainy, earthy depth, leading to a refined, bone-dry finish. This expression captures a harmonious balance between rustic malt character, vibrant fruit esters, and a mild, integrated acidity that heightens the refreshing qualities of the Australian wheat.
Appearance. Pale straw to light gold (3–5 SRM) with a slight, persistent haze from the high wheat content. Pours with a fine-beaded, creamy white head that exhibits moderate retention and light lacing.
Aroma. Moderate to high intensity featuring a complex interplay of grainy, honey-like Rosella wheat and fruity esters. Pronounced notes of spiced pineapple, apricot, and pear mingle with lemon zest. A distinct earthy funk and subtle spiced biscuit savouriness emerge from the fermentation and extended oak aging.
Taste. The initial impression is savory with spiced biscuit and grainy wheat flavors. Mid-palate notes of pineapple, pear, and stone fruit are brightened by a mild acidity and citrus highlights. The finish is exceptionally dry and crisp with a lingering earthy character, faint oak tannins, and very low hop bitterness.
Mouthfeel. Medium-light body with high carbonation that provides a prickly, refreshing texture. Very low alcohol warmth at 5% ABV. Crisp and effervescent with a light tannic structure from the wine barrels.

Field Work: Rosella Wheat - Field Work: Rosella Wheat aims to highlight the characteristics a single, unique varietal of wheat brings to our beer. By brewing our ‘Gold’ recipe yet replacing our usual red wheat varietal with ‘Rosella’ wheat, a soft wheat with a honeylike flavour when baked. This beer was fermented with our house culture containing a diversity of yeasts and bacteria collected from native flowers from NSW then transferred into ex-wine oak barrels for 15 months maturation before being blended and bottled where it rested for conditioning and natural carbonation until release. - Engaging nose, herbal dark spices, lifted honeyed orange citrus and sweet stone fruits.  Soft buttery oak and lemon citrus add fine complexity. Palate is forward and compact. There’s a breadth and weight upfront that’s earthy and grainy. Spiced pineapple, apricot, pear and citrus combine with a strong spiced biscuit savouriness. Oak shows its hand on the finish. Compact with mild acidity.
