Dreamin' presents a sophisticated marriage of rustic grain and vibrant New Zealand fruit. The regenerative organic barley and wheat provide a crackery, straw-like foundation that supports high-toned aromatics. Organic Motueka hops drive the sensory experience, offering bright bursts of fresh lime zest and subtle mojito-mint, which intertwine with the fruity esters produced by the mixed-culture fermentation. As a Brett Beer, the palate is exceptionally dry and effervescent, showcasing a youthful stone fruit character and a whisper of wild funk. This ale balances its agricultural heritage with a clean, tropical-forward profile that finishes crisp and remarkably refreshing.
Appearance. Pale straw to light gold (3-4 SRM). Features a tall, fluffy white head with excellent retention and delicate lacing. Notable haze from the high wheat content, though not completely opaque.
Aroma. Moderate to high intensity with a complex blend of lime, lemon peel, and tropical fruit from the Motueka hops. The malt contributes a raw, grainy, and slightly doughy scent from the organic barley and wheat. Fermentation notes include pear and apricot esters with a light, earthy funk reminiscent of dry hay.
Taste. The initial impression is bright and citrus-forward, immediately followed by a crisp, crackery malt backbone. Hop flavors of lime and herbaceous tropical fruit dominate the mid-palate. Bitterness is low to moderate, serving only to balance the rustic grain. The finish is bone-dry and clean, with a lingering, pleasant mineral quality and a light Brett-driven fruitiness.
Mouthfeel. Medium-light body with a high, prickly carbonation that creates a refreshing, spritzy sensation on the tongue. There is no perceived alcohol warmth, and the wheat provides a soft, creamy texture despite the high attenuation.
