Distinctly Perceived 2021 is a masterfully nuanced Straight Sour Beer that showcases the terroir-driven artistry of Wildflower. This barrel-aged ale is transformed by the addition of Riesling, Viognier, Semillon, and Zibibbo grape pomace, resulting in a complex, multi-layered profile. The nose is incredibly aromatic, bursting with notes of ripe melon, musk sticks, and a tickle of ginger. On the palate, the beer balances a bright, clean lactic acidity with the structured, skinsy tannins of direct-press white wine skins. Flavors of pear, farmhouse cider, and cooked citrus meld with stone fruit and a lingering woody spice. It is a vibrant, textured beer with a remarkably dry, elegant finish.
Appearance. Pale straw to light gold (3-5 SRM). Large, dense white head with moderate to poor retention typical of acidic styles. Clarity is slightly hazy with noticeable effervescence.
Aroma. High intensity with a dominant, clean lactic sourness. Complex fruit character featuring melon, musk, and ginger. Subtle bready malt underpins notes of herbaceous grape skins and a hint of dry, woody spice. No hop aroma.
Taste. Initial impression is sharply sour but balanced by a structured phenolic character. Low crackery malt flavor supports an array of fruit notes including pear, tart cider, stone fruit, and cooked citrus. Bitterness is undetectable, replaced by a skinsy, tannic grip. The finish is very dry and clean with a lingering woody spice aftertaste.
Mouthfeel. Medium-light body with high carbonation providing a crisp, effervescent sensation. Low alcohol warmth. Notable tannic astringency from the grape skins adds significant texture and length to the palate.
