Wildflower Brewing & Blending Anchovy Toast

This complex Brett Beer showcases a masterful integration of rustic grains and distinctive modern hopping. Utilizing rescued A.P Bakery bread and regenerative organic grains, the profile opens with aromatic toasted vanillin biscuits and fresh basil. The proprietary Anchovy hop from Segal Hop Ranch drives a multifaceted bouquet of resinous pine, cut grass, and bright lime juice, which evolves into unexpected layers of guava and raspberry. On the palate, a floral perfume blooms against a backdrop of toasty grain and clean bitterness. The Wildflower fermentation character ensures a bone-dry finish, allowing the fresh hop oils and delicate berry notes to shine with exceptional purity.
Appearance. Pale straw to light gold with a soft, persistent haze from the bread and wheat straw filtration; features a brilliant white, frothy head with moderate to high retention and fine lacing.
Aroma. High aromatic intensity featuring fresh basil, pine needles, and lime zest. Distinctive notes of toasted bread crust and vanillin biscuits emerge, supported by moderate tropical fruit esters of guava and a light, earthy Brettanomyces funk.
Taste. The palate opens with zesty lime and resinous pine, quickly transitioning into a surprising mid-palate of raspberry and floral perfume. The malt character is dry and crackery with a clear toasty grain presence. Bitterness is moderate and clean, leading to a bone-dry, highly attenuated finish with lingering grassy and berry notes.
Mouthfeel. Medium-light body with high, effervescent carbonation; crisp and very well-attenuated. The bread addition provides a slight underlying creaminess despite the dry finish, with no perceptible alcohol warmth or astringency.

Made with A.P Bakery bread which we brewed with our dear friend Matt Storm of the legendary Seattle beer bar, The Masonry, and his brewery Fast Fashion. To make this ale, we mashed regenerative organic grains together with over 150 rescued loaves A.P had from the commissioning of their new Marrickville oven, clarified the wort through wheat straw and boiled with Fast Fashion's proprietary hop named 'Anchovy' (because it goes well with pizza) grown by Segal Hop Ranch in Yakima. Vegan friendly, no fish were harmed in the making of this beer.

Luke's tasting notes - Fresh basil, pine, cut grass, lime juice and toasted vanillin biscuits on the nose. The fruit characters of guava and raspberry come late and unexpectedly. Wonderful lift and purity of aromas, an overwhelmingly fresh and complex hop driven nose. The palate shows the pine, grassiness and surprisingly raspberry characters. There’s a floral perfume that blooms in the periphery and fills the palate. It moves quickly, bursting with flavours before fading to a moreish finish. Clean bitterness and toasty grains to close. Very enjoyable. Interesting to see how this one ages. The hop seems incredibly fresh still. Really nice finish.
