Wilderness Brewery

This Saison presents a sophisticated, time-matured profile resulting from eighteen months of maturation in Bordeaux barrels. The grist of Pilsner malt, wheat, and raw wheat provides a firm, biscuit base that supports a complex fermentation driven by the Balance house culture. Bright acidity interweaves with distinctive stone fruit notes of nectarines, while the use of aged hops contributes a subtle, earthy depth without assertive bitterness. The extended wood aging introduces a graceful vinous character and delicate tannins, elevating the rustic farmhouse origins into a refined, effervescent experience. It concludes with a bone-dry, lingering finish that highlights the masterful interplay between wild yeast, grain, and oak.

Appearance. Pale gold (6 SRM) with a slight, persistent haze from the raw wheat additions. It supports a long-lasting, dense, rocky white head that leaves significant Belgian lace on the glass. Highly effervescent with visible rising carbonation.

Aroma. High intensity with a complex aromatic mix of fruity-spicy yeast and aged hops. Prominent esters of nectarines and citrus zest are layered over a funky, earthy farmhouse character. The Pilsner and wheat malts provide a light, grainy-sweet backdrop, complemented by a distinct vinous oak note from the Bordeaux barrels.

Taste. Initial impression is bright and refreshing with a soft, grainy malt and biscuit flavor. The palate is dominated by moderate nectarine fruitiness and a spicy, black pepper yeast character. Hop flavor is low and earthy, while bitterness is moderate but appears firmer due to the high attenuation. The 18-month barrel maturation adds a dry, woody complexity. Finishes bone-dry and clean with a lingering, spicy aftertaste.

Mouthfeel. Medium-light body with very high carbonation, providing a lively, effervescent mouthfeel. There is a light, pleasant astringency from the oak tannins but no noticeable alcohol warmth. Extremely crisp and highly attenuated.
