This 2019 Solera blend from Wild Creatures presents a complex, matured sensory profile born from three layers of spontaneous fermentation. The solera method imparts a deep, layered funk characteristic of aged Brettanomyces, revealing notes of damp hay, sun-dried leather, and a rustic earthiness. Beneath the wild character lies a delicate core of stone fruit—think dried apricots and white plums—balanced by a faint, woody structure from the extended oak contact. Effervescent and bone-dry, it showcases a masterful integration of old and new beer, finishing with a crisp, bright acidity and a lingering, mineral-driven complexity that reflects its unique Czech terroir.

Appearance. Deep gold to light amber (SRM 7-9). Moderate clarity with a faint, particulate-induced haze from spontaneous fermentation. Pours with a thin, ivory head that dissipates quickly into a fine collar with minimal lacing.

Aroma. High intensity funk featuring classic aged Brettanomyces notes of barnyard, wet hay, and aged leather. Subtle floral esters pair with stone fruit aromas of dried apricot and pear. Low toasted oak and a hint of dusty cellar earthiness round out the profile.

Taste. Initial impression is exceptionally dry and effervescent. Dominant flavors of earthy funk and rustic spice transition into light fruitiness resembling under-ripe stone fruit. Low hop bitterness allows a mild, non-lactic tartness and subtle oak tannins to provide structure. The finish is long, clean, and remarkably crisp.

Mouthfeel. Medium-light body with high, sparkling carbonation that creates a prickly sensation on the tongue. Very low alcohol warmth despite the 6.3% ABV. Noticeable dryness with a slight, pleasant astringency from the barrel aging.

Solera je čistý blend našich spontánů. Název je odvozen od speciální systému „míchání.“ Solera se vždy používala ke zrání různých nápojů (rum, brandy, fortifikovaná vína…). Původně zejména ve Španělsku. A o co tedy jde? Naskládáte pyramidu sudů (jeden na druhý). Sudy se vždy plní pouze do nejvyšší vrstvy. A lahvují pouze z nejspodnějšího. Mezi sebou se přepouští tak, že žádný nikdy sud nikdy nevyprázdníme zcela. Výsledkem je lahodná, vyrovnaná, dobře zakulacená chuť.
