Loosely inspired by the Berliner Weisse style, the sensory profile is defined by a bright, lactic acidity and a rustic, bread-crust malt backbone. Primary fermentation in a blend of 24 wine barrels and two bourbon barrels imparts subtle tannins and a whisper of dry wood. Aromas of tart citrus and earthy barnyard funk lead into a palate of zingy lemon, crisp wheat, and a bone-dry finish. It is a masterful bridge between traditional baking and contemporary wild brewing, balancing zesty acidity with nuanced fermentation character.
