Wild Beer Modus Operandi
Modus Operandi represents a sophisticated evolution of a traditional Old Ale, transformed into a Flanders Red Ale through ninety days of maturation in oak barrels with Brettanomyces. The sensory profile is defined by an intricate interplay of wild yeast funk and luscious dark fruit. High-intensity aromas of sweet cherries, red berries, and fruit leather dominate, supported by a subtle, toasty malt backbone. On the palate, a sharp lactic acidity cuts through the medium-full body, revealing layers of vanilla and wood tannins that evoke the structure of a vintage red wine. It finishes bone-dry and elegant, leaving a lingering, complex vinous character.
Appearance. Deep burgundy to reddish-brown in color with good clarity. Pours with a fine-beaded, pale tan head that shows moderate retention and light lacing.
Aroma. High intensity; complex bouquet of black cherries, red currants, and berries. Prominent earthy and leathery Brettanomyces funk is balanced by toasted oak, light vanilla, and a sharp, clean acidic tartness without hop aroma.
Taste. Initial rich, toasty malt flavor is quickly overtaken by intense tart cherry and berry fruitiness. A complex, moderate to high sourness provides a wine-like structure, complemented by wood tannins and a hint of acetic acid. No hop flavor is present, with bitterness remaining very low to allow the acidic balance to lead into a dry, lingering finish.
Mouthfeel. Medium-full body with a smooth, rich texture; moderate carbonation provides a prickly acidic sensation. Noticeable alcohol warmth is present alongside a light tannic astringency that enhances the dry finish.
