Polychronic Tomb presents as a quintessential Hazy IPA, defined by an opaque, luminous pour and a lush, fruit-forward profile. The grist of 2 row, wheat, and malted oats creates a silken foundation for an intensive hop charge. Citra, Rakau, and Nectaron hops drive a complex bouquet of stone fruit and tropical notes, specifically yielding vivid impressions of peach, apricot, and mango. An expressive yeast strain amplifies these esters, adding a subtle hint of strawberry to the finish. The experience is soft and approachable, prioritizing depth of hop saturation and a rounded mouthfeel over sharp bitterness.
Appearance. Hazy, opaque straw-gold with a brilliant shine. Topped by a dense, rocky, meringue-like white head with exceptional retention and thick lacing.
Aroma. High intensity aromatics of ripe peach and apricot, supported by a tropical mango core. Background notes of bready malt and grainy wheat are present but subtle. Expressive yeast esters provide a sweet, berry-like nuance without any harsh herbal or grassy notes.
Taste. Explosion of tropical and stone fruit flavors, mirroring the aroma with dominant mango, peach, and apricot. A hint of strawberry emerges mid-palate. Low to medium-high bitterness that feels softer and more integrated due to the fuller body. Finishes off-dry and smooth with a lingering juicy fruit aftertaste.
