This dry-hopped Saison presents a vibrant, refreshing take on the farmhouse tradition, characterized by its high attenuation and complex botanical profile. The addition of Motueka hops drives an expressive aromatic profile of tropical fruit and bright citrus, which melds seamlessly with the mojito-like zest of fresh lime. An infusion of ginger adds a layer of candied spice that enhances the classic peppery phenols and subtle farmhouse funk produced by the yeast. A soft, grainy malt backbone supports these bold flavors while maintaining a crisp, bone-dry character. Effervescent and quenching, the experience concludes with a lingering, spicy pepper finish and zesty lime acidity.

Appearance. Pours a beautiful hazy straw (3–4 SRM) with a full and fluffy, long-lasting white head that leaves significant Belgian lacing on the glass.

Aroma. High intensity aromatics of tropical fruit, passionfruit, and mojito lime from Motueka hops. This is layered over spicy black pepper phenols, light Saison funk, and a sharp, earthy ginger note. Malt is low and cracker-like.

Taste. Initial impression is bright and citrus-forward with lime and tropical fruit. The mid-palate features candied ginger and a soft, grainy malt presence. Hop bitterness is moderate but accentuated by the very dry finish and spicy phenols. Flavors of black pepper and lime zest linger in a clean, crisp aftertaste.

Mouthfeel. Medium-light body with high, effervescent carbonation. Very low alcohol warmth. Highly attenuated and crisp with a refreshing, slightly biting quality from the ginger and lime acidity.
