This Double IPA delivers a dense, sensory-forward experience defined by its heavy saturation of New World hops. The grist, rich in oats and wheat, creates a silky, opaque foundation that carries an intense aromatic profile of tropical and stone fruits. Citra Incognito, Mosaic, and Idaho 7 provide a base of ripe mango and citrus, while a massive dry-hop addition of Citra, Strata, Nelson, and Galaxy drives vibrant notes of peach, passion fruit, and white grape. The result is a remarkably soft, fruit-focused beer that balances its 8% strength with a creamy texture and a smooth, lush finish devoid of harshness.
Appearance. Pale gold to light orange (5-7 SRM). Opaque and hazy with a thick, fluffy, persistent white head that leaves dense lacing on the glass.
Aroma. High intensity with dominant notes of passion fruit, ripe peach, and mango. Background hints of dank resin, citrus zest, and crushed gooseberry. Malt aroma is low and neutral, providing a soft, doughy, and grainy support.
Taste. Initial impression is a wave of saturated tropical fruit flavor, specifically peach and passion fruit. Hop complexity is very high, featuring berry and melon notes. The malt provides a soft, cereal-like sweetness that balances a moderate, non-harsh bitterness. The finish is smooth and fruit-heavy with a clean, lingering hop essence.

DDH INTERSTELLAR SKYLIGHT is a New England DIPA brewed with @obercreekbrewing, we literally get asked for this beer to return on a daily basis so when they came for a visit a few weeks back we had to fill a tank together. Brewed with a ton of oats and wheat, this beer was hopped on the hot side with some Citra Incognito, Mosaic, and Idaho 7 pellets. We dry hopped this with Citra, Strata, Nelson, and Galaxy and this go around we increased the hopping rate exponentially. This one pours hazy with a thick fluffy head. Soft on the pallet, it has saturated notes of peach and passion fruit.
