Metatropics is a vibrant, deconstructed Saison that masterfully replaces tropical hop profiles with an authentic infusion of real pineapple, passionfruit, mango, and grapefruit. This collaboration between Wicked Weed and Trois Dames presents a sun-drenched sensory experience where the citrus-forward zest of grapefruit and the fleshy sweetness of mango meet the rustic complexity of Brettanomyces. The wild yeast imparts a sophisticated, earthy funk that weaves through a peppery, spicy fermentation profile. It is a highly attenuated and refreshing farmhouse ale, delivering a dry, effervescent finish that highlights both tropical fruit intensity and the crisp, grainy character of a classic Belgian style.

Appearance. Ranging from pale gold to a vibrant orange (approx. 7 SRM). It features a long-lasting, dense, and rocky white head with excellent lacing. The beer is unfiltered, exhibiting a soft haze due to the fruit additions and wild yeast presence.

Aroma. High intensity, dominated by a cocktail of tropical esters. Punchy notes of fresh pineapple, tart passionfruit, and sweet mango are balanced by a sharp grapefruit citrus. The Brettanomyces provides a complex layer of earthy funk and light leather, while the base yeast contributes moderate black pepper phenolics and a subtle, grainy malt backbone.

Taste. The initial impression is a burst of tropical acidity and fruit flesh. Flavors of mango and passionfruit lead, followed by a mid-palate of spicy black pepper and a drying grapefruit zest. Bitterness is moderate but crisp, enhanced by high attenuation. The finish is remarkably bone-dry and clean, with a lingering aftertaste of tropical fruit skin and rustic farmhouse funk.

Mouthfeel. Medium-light body with very high, effervescent carbonation. A light, pleasant alcohol warmth is present. The mouthfeel is crisp and highly refreshing, lacking any residual heaviness, with a slight puckering dryness from the fruit acids and wild yeast.
