This Imperial Stout offers an immense sensory journey, defined by its deep maturation on bourbon barrel chips. The appearance is a striking, opaque jet black, topped with a dense tan foam. On the nose, intense layers of bittersweet chocolate and espresso meld with the unmistakable essence of toasted oak and vanilla-laced bourbon. The palate is equally bold, delivering a chewy, full-bodied experience where rich roasted malts collide with dark fruit notes of plum and raisin. The short aging on wood chips adds a refined spirituous edge and a hint of tannin, finishing with a smooth, lingering warmth that exemplifies the decadence of the style.
Appearance. Jet black and opaque (SRM 40+). Pours with a thick, persistent deep tan head that leaves dense lacing. High viscosity is evident by the slow-forming legs on the glass.
Aroma. High intensity. Dominant aromas of roasted coffee, dark chocolate, and black licorice. The bourbon barrel chips contribute clear notes of toasted oak, vanilla, and a hint of sweet spirit. Moderate esters of dried plum and raisin are present, balanced by a clean, warming alcohol character.
Taste. Massive initial impression of bittersweet cocoa and heavily roasted grain. The mid-palate introduces toasted oak and bourbon sweetness, which helps soften the firm hop bitterness. Flavors of black currants and dried figs provide complexity. The finish is long and lingering with a harmonious balance of roasted malt bitterness and gentle alcoholic warmth.
Mouthfeel. Full-bodied and very chewy with a velvety, luscious texture. Carbonation is low to moderate. A smooth, noticeable alcohol warmth is present but remains well-integrated and never sharp.
