Whym La Triple
This Belgian Tripel presents a remarkably pale, golden hue with a characteristically yeasty haze. Despite a potent 9.8% ABV, it remains exceptionally easy-drinking, driven by an ancient Belgian yeast strain fermented at high temperatures to yield a bouquet of peppery spice and bright citrus esters. The aroma is dominated by lemon-like fruitiness and clove phenols over a delicate, grainy-sweet Pilsner malt foundation. On the palate, it is remarkably light-bodied and effervescent, delivering a bone-dry finish where firm bitterness balances soft honey notes. It is a deceptively strong monastic-style ale defined by fermentation complexity rather than adjuncts.
Appearance. Pale yellow to gold (4.5–7 SRM). Features a persistent, rocky, creamy white head. Displaying a notable haze from suspended yeast.
Aroma. High intensity bouquet of peppery and clove-like phenols interwoven with citrusy esters reminiscent of lemon and orange. Low, grainy-sweet Pilsner malt character with a hint of honey. Alcohol is soft and spicy.
Taste. Initial soft malt sweetness transitions to a complex display of spicy phenols and ripe fruit esters. Firm bitterness provides a crisp counterpoint to the high alcohol. Finishes exceptionally dry and clean with a lingering spicy-fruity yeast character.
Mouthfeel. Medium-light body, appearing lighter than the gravity suggests. High carbonation creates a lively, effervescent, and creamy texture. Smooth alcohol warmth is present but well-integrated.
