This audacious Imperial Stout presents a sensory collision of deep decadence and sharp intensity. Aged in Islay whisky barrels, it leads with a bold profile of medicinal peat smoke and charred oak, seamlessly integrated with rich, dark cocoa. The addition of mint creates a startlingly fresh, cooling counterpoint to the heavy roasted malts, evoking a sophisticated, chocolate-covered mint confectionery. Expect a complex interplay of espresso-like bitterness and dark fruit esters, driven by the high alcohol content. The finish is remarkably persistent, balancing the warmth of the spirit with a lingering, minty breeze across a massive, velvety malt backbone.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, dense, dark tan head that shows moderate retention. High viscosity is evident in the slow-moving legs that coat the glass after swirling.
Aroma. Intense and complex. Dominant notes of dark chocolate and cocoa powder are layered over a pungent, medicinal peat smoke from the Islay barrels. A sharp, refreshing mint aroma pierces through the roast. Subtle background esters of dried figs and prunes are present, alongside a noticeable but clean alcohol warmth and a hint of earthy hops.
Taste. A massive initial impression of bittersweet cocoa and roasted coffee beans. The mid-palate is dominated by the Islay barrel influence—sea salt, iodine, and campfire smoke—which is immediately brightened by a cool mint flavor. High bitterness from both roasted grains and hops provides structure. The finish is long and complex, transitioning from smoky and roasty to a clean, lingering minty freshness.
Mouthfeel. Full-bodied and exceptionally chewy with a luscious, velvety texture. Carbonation is moderate-low, enhancing the beer’s weight. A significant, smooth alcohol warmth is felt in the throat, complemented by a slight physical cooling sensation from the mint.
