This vibrant Wild Specialty Beer offers a decadent sensory experience that mirrors a tropical cheesecake. Intense aromas of ripe banana and golden pineapple lead the charge, supported by the pungent, tangy zest of passionfruit and succulent mango. The wild fermentation imparts a nuanced lactic sourness that mimics the creamy tartness of a classic dessert, seamlessly blending with a subtle earthy funk. On the palate, the fruit expression is bold and multi-layered, balanced by a clean, acidic backbone and a hint of graham cracker malt character. It finishes with a lingering tropical brightness and a smooth, velvety character that belies its complex wild roots.

Appearance. Deep gold to hazy orange; moderate off-white head with fair retention; significant haze from fruit solids and wild yeast.

Aroma. High intensity aromatics of ripe tropical fruit including pineapple, mango, and passionfruit; a distinct creamy, lactic tang reminiscent of cheesecake; low bready malt; subtle funky notes of hay and light earthiness from wild fermentation.

Taste.
