Celebrating a six-year milestone, this Wild Specialty Beer offers a striking juxtaposition between rustic fermentation and dessert-inspired decadence. The sensory profile is defined by a bright, lactic acidity that cuts through the rich, aromatic presence of real vanilla cream and sweet birthday cake batter. On the nose, funky wild fermentation notes of lemon zest and light stone fruit are softened by a distinct buttery, doughy character reminiscent of yellow cake. The palate delivers a crisp, tart edge balanced by a smooth, lingering vanilla sweetness. This celebratory brew concludes with a clean, dry finish despite its indulgent, cake-inspired aromatics and creamy texture.
Appearance. Deep gold to pale amber (7-10 SRM). Hazy to opaque appearance due to the inclusion of cake batter and cream. Fine-beaded white head with moderate to low retention, typical for acidic wild ales.
Aroma. High intensity. Prominent vanilla bean and buttery cake dough aromatics dominate. These sweet scents are layered over a complex wild character featuring lactic tartness, apricot esters, and a faint earthy funk. Hop aroma is absent.
Taste. Sharp, clean lactic sourness provides the initial impression, followed by a rich wave of vanilla and sweet malt reminiscent of cake flour. The wild fermentation adds a complex, slightly tart citrus and vinous undertone. Bitterness is very low, providing no interference with the dessert flavors. The finish is remarkably dry, leaving a lingering aftertaste of vanilla frosting and tangy fruit.
Mouthfeel. Medium-full body, notably weightier and creamier than a standard wild ale due to the vanilla cream and batter additives. Carbonation is moderate. Alcohol warmth is very light and well-integrated. No astringency.
