This vibrant Wild Specialty Beer offers a decadent, tropical escape reminiscent of a tiki cocktail. A lively wild fermentation provides a tart, acidic backbone that cuts through the rich, pastry-like layers of cake batter and vanilla. Intense aromas of fresh pineapple and ripe mango lead the sensory experience, supported by a lush, creamy foundation of coconut and sweet banana. The interplay between the sour, funky character of the base beer and the unctuous, dessert-inspired adjuncts creates a complex profile that is both refreshing and indulgent, finishing with a lingering, sweet-and-sour tropical fruit brightness.
Appearance. Deep gold to hazy pale orange (6-10 SRM) with a thick, persistent white head. Significant haze is present from the fruit and cake batter additions, with fine carbonation bubbles visible.
Aroma. High intensity aromatics of bright pineapple and fleshy mango. A distinct lactic sourness blends with sweet vanilla and toasted coconut. Subtle doughy notes of cake batter and ripe banana esters are present, alongside a mild earthy funk from the wild fermentation.
Taste. Initial impression is a sharp, clean acidity followed immediately by a wave of sweet pineapple and mango. The mid-palate reveals a rich, creamy texture with prominent coconut and vanilla flavors. The cake batter adds a doughy, sweet malt complexity that balances the tartness. The finish is long and fruity with a well-integrated banana character and a lingering lactic tang. Bitterness is negligible.
Mouthfeel. Medium body with a noticeable silkiness and creaminess from the vanilla and coconut. Moderate carbonation provides a refreshing lift to the palate. Alcohol warmth is very low and well-integrated. No significant astringency despite the high fruit concentration.
