This Wild Specialty Beer presents a decadent, smoothie-inspired profile that pushes the boundaries of wild fermentation. Tropical notes of ripe mango and zesty pineapple collide with the creamy, dense sweetness of banana, mirroring a vibrant fruit puree. The wild fermentation base provides a necessary acidic counterpoint, cutting through the rich, indulgent layers of vanilla soft serve ice cream and the tangy, biscuit-like depth of vanilla cheesecake. Appearance. Opaque and saturated golden-yellow (10-14 SRM) with the thick, viscous consistency of a fruit smoothie. Supports a dense, creamy white head with moderate retention and light, patchy lacing.
Aroma. High intensity aromatics of ripe mango and fresh pineapple dominate, supported by a heavy custard-like sweetness. Pronounced notes of vanilla bean and tangy cheesecake are present, with a subtle, sharp lactic acidity and very low earthy funk from the wild fermentation.
Taste. An initial explosion of tropical fruit sweetness featuring juicy mango and sweet banana. The mid-palate introduces a complex dessert character of vanilla soft serve and tangy cheesecake. Hop bitterness is negligible, allowing the lactic tartness and fruit acidity to provide balance. Mouthfeel. Full-bodied and viscous with a heavy, mouth-coating creaminess. Carbonation is moderate, providing enough lift to prevent the beer from feeling syrupy. Alcohol warmth is very low and well-integrated; no astringency is present despite the high fruit solids.
