WILL IT FLOAT #14 is a decadent Wild Specialty Beer that bridges the gap between a tart ale and a dessert. This collaboration with Tripping Animals pours a vibrant, hazy pink, bursting with aromas of ripe strawberry and caramelized banana. The infusion of vanilla soft serve ice cream and vanilla cheesecake creates a lush, creamy aromatic profile that masks the underlying wild fermentation. On the palate, a bright acidity cuts through the rich flavors of berry compote and banana purée, while the vanilla provides a lingering, velvety sweetness. It is a complex, pastry-inspired sour that balances tartness with indulgent confectionery notes.

Appearance. Hazy, opaque rose-pink to soft red (10-14 SRM). Moderate pink-tinted head with fair retention; some lacing is present but fades quickly due to fruit solids and oils.

Aroma. High intensity. Dominant notes of fresh strawberry and sweet, ripe banana. Strong secondary aromas of vanilla bean and a creamy, lactic tang reminiscent of cheesecake. Very low funky esters; the wild character is expressed primarily through a clean, sharp acidity that brightens the fruit.

Taste. Initial impression is a burst of tart strawberry followed by the smooth, tropical sweetness of banana. Mid-palate reveals a rich vanilla cheesecake flavor with a hint of graham cracker crust. Hop bitterness is negligible (0-5 IBU). The finish is long and fruity, with a well-integrated acidity that prevents the vanilla and lactose-like sweetness from becoming cloying.

Mouthfeel. Medium-full body, possessing a creamy, almost pulpy texture. Carbonation is moderate, providing enough lift to maintain drinkability. Alcohol warmth is very low and well-hidden. Slight astringency from fruit skins is possible but minimal.
