White Dog Brewery

This Wild Specialty Beer is a dense, high-impact smoothie-style ale designed for sensory saturation. It erupts with an intense tropical profile led by ripe Mango and bright Pineapple, anchored by the creamy, structural weight of pureed Banana. The addition of Vanilla and Cheesecake notes imparts a decadent, lactic richness that mimics a liquid dessert. While the underlying wild fermentation provides a foundational tang, the focus remains on the thick, velvety interplay of tropical fruit and confectionery sweetness. It is an unapologetically bold, opaque, and viscous experience that pushes the boundaries of traditional fermentation into the realm of a liquid pastry.

Appearance. Opaque and deeply turbid with a dense, pulpy consistency; color is a vibrant, saturated golden-orange. Head formation is minimal and dissipates rapidly due to high fruit solids and oils from the adjuncts.

Aroma. High intensity aromatics of fresh-pressed Pineapple and Alphonso Mango dominate the nose. Substantial creamy Vanilla and sweet lactic notes suggest cheesecake crust and tangy filling. The wild fermentation character is subtle, providing a clean, yogurt-like tartness.

Taste. Immediate explosion of sweet Mango and tart Pineapple juice, followed by the heavy, sweet-starch profile of ripe Banana. The mid-palate is defined by rich Vanilla and a tangy, cheesecake-like acidity. Bitterness is non-existent. The finish is long, sweet, and laden with lingering fruit pulp and dessert-like richness.

Mouthfeel. Full-bodied and exceptionally viscous; the texture is thick, creamy, and smoothie-like. Carbonation is low to maintain a soft, heavy mouthfeel. Very slight alcohol warmth is present but well-masked by the dense fruit density.
