A sophisticated collaboration between Whiplash and Mescan Brewery, The Climb is a vibrant, elevated Saison that bridges modern dry-hopping with traditional rustic foundations. The aroma presents a complex tapestry of peppery phenols and bright pome fruit esters, enhanced by a generous dry-hopping regimen that introduces floral and citrus layers. On the palate, the use of Spelt contributes a distinctively nutty, grainy depth and a silken texture that balances the beer’s assertive, bone-dry finish. Effervescent and bright, it masks its 7.1% ABV with a crisp, refreshing snap, leaving a lingering trail of spicy yeast character and clean hop bitterness.
Appearance. Deep gold with a slight hazy sheen from the spelt and dry-hopping. It supports a voluminous, rocky, long-lasting white head that leaves significant Belgian lace on the glass. Highly effervescent.
Aroma. High intensity. A complex blend of fruity esters, notably pear and lemon zest, mingles with spicy, cracked white pepper phenols. The hop character is pronounced and floral with a touch of herbal grassiness. A rustic, grainy malt backbone from the spelt adds a nutty undertone.
Taste. Initial soft, grainy malt presence is quickly overtaken by a dry, spicy character. Flavors of citrus peel and green apple transition into a firm hop bitterness. The spelt provides a rustic cereal mid-palate. Finishes bone-dry with a lingering peppery and floral aftertaste without any lingering sweetness.
Mouthfeel. Medium body with a somewhat creamy texture from the spelt. Very high carbonation creates a lively, prickly effervescence on the tongue. A light, well-integrated alcohol warmth is present, commensurate with its strength.
