Escape is a vibrant Wild Specialty Beer designed as a liquid vacation, channeling the tropical essence of a Piña Colada. Brewed with an abundance of pineapple puree and coconut milk, it offers an immersive sensory experience where lush, sun-ripened pineapple meets the rich, creamy decadence of coconut and milk sugar. A delicate lactic acidity from the kettle souring process balances the sweetness, while the addition of coconut puree provides a velvety depth. This sensory journey transports the palate to a serene, floating island, where the tartness of the fruit and the smooth, lactose-driven mouthfeel harmonize into a refreshing, cocktail-inspired escape.
Appearance. Pale straw to golden yellow (SRM 3-5). Opaque and hazy due to the heavy addition of pineapple puree and coconut milk. Features a moderate white head with fair to poor retention, typical for beers containing coconut oils.
Aroma. High intensity aromatics of fresh, acidic pineapple and rich, sweet coconut cream. The lactic sourness is clean and sharp, providing a bright counterpoint to the vanilla-like sweetness of milk sugar. Hop character and malt aromatics are negligible, entirely replaced by the tropical profile of the specialty ingredients.
Taste. The initial impression is a burst of tart, juicy pineapple followed immediately by a smooth, fatty coconut richness. Malt flavor is low and neutral, while hop bitterness is nearly absent. The lactic acidity is prominent but well-integrated with the sweetness of the lactose. It finishes with a lingering, creamy tropical fruit character that mimics a well-crafted cocktail.
Mouthfeel. Medium-full body with a remarkably smooth and creamy texture derived from coconut milk and milk sugar. Carbonation is moderate, providing enough lift to prevent the beer from feeling cloying. Alcohol warmth is subtle and well-integrated at 6.5% ABV. No astringency is present.
