This Belgian Dubbel presents a rich, monastic character defined by a deep reddish-copper hue. The aroma is dominated by a complex interplay of caramelized sugar, toasted malt, and a distinct hint of chocolate. Fermentation brings forth moderate spicy, peppery phenols and evocative dark fruit esters reminiscent of raisins and plums. On the palate, a smooth malt sweetness leads into flavors of dark caramel and dried fruit, balanced by a restrained bitterness and a subtle, perfumy alcohol warmth. The finish is surprisingly dry, leaving a lingering impression of yeast-derived spice and rich, bready malt.
Appearance.Dark amber to a deep reddish-copper (14-17 SRM) with excellent clarity. It features a large, dense, and long-lasting creamy off-white head with persistent lacing.
Aroma.Moderate to moderately strong intensity. Rich malty aroma with notes of caramelized sugar, toast, and a subtle hint of chocolate. Moderate dark fruit esters such as raisins and plums are present, accompanied by low to moderate spicy, peppery phenols. Hops are absent.
Taste.Initial impression is malty-rich with flavors of caramel, chocolate, and toasted grain. Medium-low bitterness allows the malt to lead the balance. Mouthfeel.Smooth, medium to medium-full body with medium-high carbonation that provides a creamy texture. Displays a low, well-integrated alcohol warmth without being hot or solventy.
