This Imperial Stout offers a decadent, multi-layered sensory experience forged by fifteen months of maturation in Weller wheated bourbon barrels. Intense aromas of rich dark chocolate and smooth vanilla lead into a viscous palate where the depth of roasted malts meets the charred oak and caramel sweetness of the spirit. The addition of Ghost, Carolina Reaper, and Death Spiral peppers provides a slow, creeping warmth that complements the 13.2% alcohol, rather than overwhelming the dessert-like base. It finishes with a harmonious balance of bittersweet cocoa, toasted oak, and a lingering, spicy tingle.
Appearance. Jet black and opaque (40+ SRM). Pours with a thick, deep tan to mocha head with moderate retention. Viscous legs are prominent on the glass, indicating high gravity and alcohol.
Aroma. High intensity. Dominant scents of bittersweet chocolate and cocoa nibs meld with Weller bourbon-derived vanilla and coconut. Subtle earthy and fruity pepper notes from the Carolina Reaper and Death Spiral varieties emerge alongside dark fruit esters like raisin and prune. Very low hop aroma.
Taste. The initial impression is an explosion of fudge and dark chocolate. Mid-palate reveals bourbon-soaked oak, caramel, and a smooth wheated whiskey character. Bitterness is moderate, derived from both roasted grain and the peppers. The finish is long and warming, showcasing a controlled spicy heat from the Ghost peppers that balances the residual sweetness.
Mouthfeel. Full-bodied, chewy, and velvety. Carbonation is low to moderate, enhancing the luscious, creamy texture. A significant, smooth alcohol warmth is present, augmented by a gentle, localized heat on the back of the throat from the pepper blend.
