This Spice, Herb, or Vegetable Beer presents an inviting, sensory-rich take on a Porter base, showcasing a collaboration focused on depth and heat. Aromas of rich organic cocoa dominate the nose, elegantly complemented by the earthy, raisin-like notes of ancho peppers and a subtle tropical fruit hint from Scotch bonnet peppers. The palate follows with a complex interplay of bittersweet chocolate and toasted malt, where the earthy pepper depth transitions into a gentle, building capsaicin heat. Despite the adjuncts, the finish remains balanced and drinkable, allowing the roasty character to linger alongside a soft, integration-focused warmth.
Appearance. Deep mahogany to near-black (SRM 30-35) with a persistent, creamy tan head and good lacing. The beer is clear at the edges when held to the light.
Aroma. Moderate intensity featuring dominant notes of dark chocolate and cocoa powder. Supporting layers of dried dark fruit and mild tobacco from the ancho peppers are present, with a very light fruity-peppery ester from the Scotch bonnets. Low earthy hop aroma and clean fermentation character.
Taste. Initial flavors of bittersweet organic cocoa and toasted bread provide a solid malt foundation. Medium-low bitterness provides balance without being harsh. The mid-palate introduces the ancho’s plum-like sweetness and the Scotch bonnet’s distinctive pepper flavor. The finish is off-dry with a lingering, pleasant warmth from the chilies and a touch of roasted malt bitterness.
Mouthfeel. Medium body with a smooth, slightly creamy texture likely enhanced by the cocoa. Moderate carbonation provides a clean lift. A notable but non-astringent chili warmth coats the throat without being aggressive or sharp.
