This Double IPA is a concentrated exploration of New Zealand terroir, showcasing the multi-dimensional character of Nelson Sauvin through the use of Kohia Nelson, Maui Nelson, and SubZero Hop Kief. It pours a dense, luminous straw-gold with a permanent white head. The aroma is saturated with crushed gooseberry, passionfruit, and the signature white wine notes of Nelson Sauvin, backed by a soft, doughy malt base. On the palate, intense tropical flavors of mango and lime zest collide with a persistent, clean bitterness. The finish is remarkably smooth for its strength, offering a dry, resinous snap that highlights the concentrated hop oils without cloying sweetness.
Appearance. Pours a hazy, opaque pale gold to light orange (SRM 4-6). Features a thick, creamy, off-white head with excellent persistence and intricate lacing on the glass.
Aroma. High intensity. Dominated by a complex hop bouquet of white grape skins, gooseberry, passionfruit, and crushed pine needles from the Nelson Sauvin, Kohia Nelson, and Maui Nelson hops. Low, neutral grainy malt sweetness in the background with moderate fruity esters from the yeast. No harsh solventy alcohol.
Taste. Explosive hop flavors mirror the aroma, featuring intense white wine, tropical melon, and sharp lime citrus. Moderately high bitterness provides structure without being harsh or astringent. Malt is supportive and soft, reminiscent of white bread or crackers. Finishes medium-dry with a lingering resinous and fruity aftertaste.
Mouthfeel. Medium-full body with a soft, pillowy texture. Moderate carbonation. A gentle, well-integrated alcohol warmth is present, commensurate with its 8.6% ABV. Smooth and creamy mouthfeel with no significant astringency.
