Open Skies is a vibrant Double IPA that captures the essence of modern American brewing with its lush, tropical-forward character. At 8.7% ABV, this beer presents a bold yet incredibly smooth experience. The aroma is a concentrated burst of ripe mango, passion fruit, and bright citrus zest, underpinned by a soft, doughy malt backbone. On the palate, the intensity of the hops shines through with layers of pineapple and stone fruit, balanced by a restrained bitterness and a creamy, pillowy texture. It finishes clean with a gentle, warming glow, making it an approachable yet complex expression of the style.
Appearance. Hazy, opaque gold to light orange (SRM 6-8) with a moderate-sized, persistent, creamy white head that leaves thick lacing on the glass.
Aroma. High intensity hop aroma featuring notes of mango, pineapple, and tangerine. Background malt is neutral and slightly grainy-sweet. Fermentation is clean with light fruity esters and a soft, well-integrated alcohol presence.
Taste. Strong, complex hop flavors of tropical fruit and citrus dominate the initial impression. Low, soft, bready malt character supports the hop-heavy profile without adding caramel sweetness. Bitterness is moderately high but remains smooth and lacking harshness. The finish is medium-dry with a lingering hoppy aftertaste of stone fruit.
