This Weissbier offers a modern Colorado interpretation of the classic German style, showcasing a luminous haze and a pillowy texture. The grist, split equally between Wheat malt and Pilsner malt, provides a foundational doughy, bready sweetness. Fermentation with a dedicated Bavarian yeast strain drives a prominent, ripe banana ester profile, intentionally balanced by a more restrained, subtle spicy clove phenolic character. A unique whirlpool hop addition provides a subtle, fresh floral lift that deviates slightly from tradition without overshadowing the yeast. The result is an approachable, highly effervescent wheat beer that finishes clean, crisp, and remarkably refreshing.
Appearance. Pale straw to gold (3–5 SRM). Distinctively hazy with a luminous glow from suspended yeast and wheat proteins. Features a massive, long-lasting, moussy white head with excellent lacing.
Aroma. Moderate to high intensity banana esters dominate, supported by a soft, bready wheat and grainy Pilsner malt backbone. The phenolic clove character is present but restrained, leaning toward a subtle baking spice. Very low floral or herbal hop notes from the whirlpool addition.
Taste. Initial impression is of soft, sweet bread and ripe banana. The wheat malt provides a grainy, doughy fullness, while the Pilsner malt adds a light honey-like sweetness. Hop bitterness is low, providing just enough balance against the malt. The finish is relatively dry and clean, with a lingering hint of fruit and spice.
Mouthfeel. Medium body with a signature fluffy, creamy texture. High carbonation creates a lively, spritzy effervescence on the tongue. Alcohol warmth is very light and well-integrated.
