This barrel-aged Imperial Stout is a decadent sensory experience, defined by nearly two years in bourbon barrels and an opulent adjunct profile. The aroma is dominated by roasted peanut flour and the confectionery sweetness of toasted marshmallows and marshmallow creme. Vanuatu vanilla beans provide a fragrant floral layer that bridges the rich dark chocolate malt with the charred oak and caramel notes of the bourbon. On the palate, a velvety, viscous texture—bolstered by a heavy addition of flaked oats—carries intense flavors of salty-sweet nuttiness and gooey marshmallow, finishing with a lingering, sophisticated bourbon warmth and a harmonious bittersweet balance.

Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, creamy, deep tan head that shows moderate retention. High viscosity is evident through thick legs coating the glass.

Aroma. High intensity and deeply complex. Dominant notes of roasted peanut and sugary marshmallow creme are layered over rich dark chocolate and espresso-like roasted malt. Significant bourbon influence contributes aromas of vanilla, toasted oak, and caramel. Low dark fruit esters like fig and raisin are present, alongside a clean, noticeable alcohol presence.

Taste. An initial explosion of sweet toasted marshmallows and Vanuatu vanilla beans is balanced by a savory, earthy peanut flour character. Mouthfeel. Very full-bodied, chewy, and luscious. The addition of flaked oats creates a velvety, coating texture. Carbonation is low to moderate, and a smooth, gentle alcohol warmth is prominent, consistent with the 12% ABV. No astringency.
