This Double IPA delivers an intense sensory experience driven by significant hot and cold-side additions of Simcoe and Mosaic hops. The aroma is an explosion of bright tropical fruit, resinous pine, and subtle berry notes. On the palate, the hop-forward profile features stone fruit and citrus dancing over a exceptionally creamy malt base. The inclusion of hefty quantities of oats and wheat provides a velvety, smooth texture that balances the firm bitterness characteristic of the style. Despite its 8.2% ABV strength, the beer remains highly drinkable with a clean fermentation profile and a lingering, hop-saturated finish that emphasizes the modern American hop character.
Appearance. Pale gold to light orange-copper (7-9 SRM). Large, persistent off-white head with excellent lacing. Slight haze present due to high wheat and oat content, though remains translucent.
Aroma. High intensity hop aroma featuring prominent notes of passionfruit, pine, and earthy resins from Simcoe, complemented by blueberry and tropical melon from Mosaic. Background malt is neutral and grainy-sweet with low fruity esters.
Taste. Strong and complex hop flavors of mango, berry, and pine resins. High bitterness that is firm but smooth, lacking harshness. Supportive, soft, grainy malt character from the oats and wheat. Finish is medium-dry and clean with a lingering hoppy aftertaste.
Mouthfeel. Medium-full body with a notably smooth, creamy, and lush texture. Moderate carbonation. Restrained, smooth alcohol warmth is present but well-integrated. No hop-derived astringency.
