This vibrant Raspberry Berliner Weisse captures the essence of summer with its striking aromatic profile and bracing acidity. Dominated by the punchy, fresh character of real raspberries, the sensory experience begins with a sharp, clean lactic sourness that defines the style. A delicate backbone of raw bread dough and grainy wheat malt provides a soft structure, while the fermentation remains exceptionally clean and fruit-forward. The palate is defined by a zippy tartness that highlights the berry fruit, finishing bone-dry and effervescent. It is a refreshing, light-bodied ale where the natural acidity of the fruit and the kettle-sour process creates a crisp, thirst-quenching finish.

Appearance. A vibrant, hazy pink-to-red hue (SRM 4-7) with a medium-sized white to faint-pink head; retention is poor to moderate with high effervescence.

Aroma. High intensity of fresh, jammy raspberries followed by a moderately sharp, clean lactic sourness. Subtle notes of raw wheat and bready dough provide a base, with a light floral ester character and no hop aroma.

Taste. Initial assertive lactic sourness harmonizes with bright, tangy raspberry fruit. A soft, grainy wheat flavor supports the mid-palate, while hop bitterness remains undetectable. The finish is remarkably dry and crisp with a lingering tartness and fruit-skin snap; no hop flavor or vinegary acetic notes.

Mouthfeel. Light body with a refreshing, brisk acidity. Carbonation is high and tingly, enhancing the crispness. No perceived alcohol warmth or astringency.
