Northern Harvest IPA is a quintessential Hazy IPA defined by a vibrant alliance of hop aromatics and a soft, pillowy texture. The nose is dominated by intense tropical dankness and bright, piney citrus derived from the fresh addition of Citra, Centennial, and Idaho 7 hops. Wayward Brewing’s in-house hazy yeast strain provides a supportive fruity ester profile and a smooth, rounded mouthfeel. On the palate, expect waves of mango and pineapple balanced by a subtle, resinous depth. The malt base remains unobtrusive yet structural, ensuring a lush, drinkable experience with a restrained, soft bitterness on the finish.
Appearance. Straw to deep gold (3-6 SRM) with a high degree of opacity providing a characteristic hazy shine. It features a dense, meringue-like white head with excellent retention and significant lacing.
Aroma. High intensity aromatics of tropical fruit (mango, pineapple), citrus zest (grapefruit, lemon), and a distinct resinous dankness. Clean, bready malt sits quietly in the background. Fruity yeast esters are noticeable, complementing the Citra and Idaho 7 hop character without clashing.
Taste. Initial impression is of intense fruit juice. High fruit flavors echoing the aroma—tropical stone fruit and citrus—are layered over a neutral, grainy malt foundation. Hop bitterness is low-to-moderate but well-restrained by the full body, leading to an off-dry, smooth finish. Centennial adds a classic piney nuance to the aftertaste.
Mouthfeel. Medium-full body with a soft, pillowy, and smooth texture. Moderate carbonation. Alcohol warmth is light and well-integrated. No harshness or astringency; lacks any raw starch texture.
