Mango Mosaic Magic presents as a vibrant Wild Specialty Beer that expertly balances tropical fruit indulgence with a sharp, refreshing acidity. The sensory profile is dominated by the lush, fleshy aroma of ripe mango, seamlessly integrated with the blueberry, stone fruit, and earthy pine notes characteristic of Mosaic hops. A clean, lactic sourness provides a bright backdrop, cutting through the perceived sweetness of the fruit. With its light body and sparkling carbonation, it offers a crisp, thirst-quenching experience where the hop-derived tropicality and the added fruit essence converge into a singular, exotic profile that finishes bone-dry and effervescent.
Appearance. Pours a hazy, pale golden to light orange (SRM 3-5), reflecting the fruit addition. A thin, white, fizzy head forms quickly but dissipates rapidly due to the low pH, leaving minimal lacing.
Aroma. High intensity aromatics of fresh mango nectar and tropical fruit. Mosaic hops contribute layers of blueberry, tangerine, and a subtle herbal dankness. A clean, lemony lactic tartness is present, with very low grainy malt and no detectable funk or acetic acid.
Taste. Immediate sharp, clean acidity followed by a burst of succulent mango flavor. The Mosaic hops provide flavors of papaya and berry, with a very low bitterness that stays in the background. Malt is a supportive, cracker-like note. The finish is very dry and acidic, with a lingering tropical fruit skin aftertaste.
Mouthfeel. Light body with a prickly, high carbonation that enhances the tartness. Alcohol warmth is non-existent. A slight tannic astringency from the mango skins adds a touch of structure to the otherwise lean and crisp profile.
