This Coffee Stout presents a sophisticated marriage of roasted grains and premium Finca Volcan Azul coffee. The sensory profile is led by an intense aroma of freshly ground beans and dark chocolate, subtly accented by the floral and citrus-like grapefruit notes of Cascade hops. On the palate, a robust malt backbone delivers deep flavors of espresso, toasted nuts, and bittersweet cocoa. The Cascade hops provide a clean, resinous bitterness that balances the 7.8% ABV warmth. Velvety and medium-full in body, the mouthfeel carries the roasted complexity through a dry, lingering finish. It is a harmonious expression of a Spice, Herb, or Vegetable Beer where the specialty ingredients heighten the classic stout character.
Appearance. Deep ebony to jet black (35–40 SRM). Opaque. Topped with a thick, creamy, mocha-colored head with excellent retention and dense lacing.
Aroma. High intensity. Pronounced notes of freshly roasted Finca Volcan Azul coffee, offering layers of berry-like acidity and espresso. Deep roasted malt character provides scents of dark chocolate and singed toast. Medium-low hop aroma of grapefruit zest and floral blossoms from Cascade hops. Clean fermentation profile.
Taste. Rich initial impression of bittersweet chocolate and cold-brew coffee. Medium-high malt flavors of charred crust and toasted oats. The Finca Volcan Azul coffee adds a subtle dark fruit depth. Firm bitterness (estimated 50–60 IBU) from both roasted grains and resinous Cascade hops. The finish is dry with a lingering roasted coffee aftertaste.
Mouthfeel. Medium-full body with a smooth, velvety texture. Moderate carbonation. A gentle, well-integrated alcohol warmth is present. No harsh coffee astringency.

Volcan Azul was incorporated into the beer as a cold brew coffee, the long extraction process enabling the coffee to impart its acclaimed flavours of red apple, brown sugar and tropical fruit, a perfect pairing for the malt & hops to create a beer of character & complexity.
