Wasted Degrees Brewing

This Evergreen Amber reimagines the Irish Red Ale with a seasonal, resinous twist. Sustained by a foundation of barley, oats, and rye, the malt profile offers deep cola and toffee notes. Hand-harvested spruce tips provide a signature forest resin that intertwines seamlessly with the piney, grapefruit character of Chinook hops. Subtle esters of orange and cherry emerge against the spicy grain backdrop provided by the rye. Despite the complex botanical additions, it retains the style’s characteristic drinkability, finishing with a hint of roasted dryness. It is a textured, medium-bodied ale that captures the crisp essence of the Atholl Estate highlands.

Appearance. Medium reddish-copper with brilliant clarity. Pours with a dense, tan-colored head featuring moderate persistence and light lacing (SRM 12–14).

Aroma. Moderate malt intensity with notes of cola, toasted bread, and light caramel. Pronounced spruce resin and piney hop character from Chinook hops dominate the initial impression, followed by low esters of sweet orange and dark cherry.

Taste. Initial soft toffee and caramel sweetness transitions into a complex mid-palate of spruce needles and resinous pine. The rye contributes a subtle peppery spice that complements the earthy Chinook hop flavor. Finishes medium-dry with a signature touch of roasted grain dryness and a moderate-low bitterness that provides balance.

Mouthfeel. Medium body with an enhanced silkiness from the inclusion of oats. Moderate carbonation and a smooth, slightly spicy texture. Very light alcohol warmth at 5.5% ABV.
