This collaboration with The Scotch Malt Whisky Society delivers a sophisticated sensory experience, marrying a robust American Stout base with four months of maturation in select whisky casks. The high alcohol content provides a significant foundation for the hand-picked spruce tips, which impart a resinous depth alongside nuances of raspberry and heather honey. The casks contribute distinct notes of toasted marshmallow, coconut, and seasoned oak, softening the aggressive roasted malt profile. Despite its strength, the beer maintains a complex balance where charred grain meets forest-floor aromatics, resulting in a decadent, multi-layered profile that celebrates Scottish botanical heritage and elite barrel aging.
Appearance. Jet black and opaque (40 SRM). Pours with a large, persistent, tan-colored head that leaves thick lacing on the glass.
Aroma. High intensity with a complex blend of roasted coffee and dark chocolate. Prominent resinous spruce notes are complemented by sweet heather honey, toasted marshmallow, and a hint of raspberry. Subtle oak and coconut from the whisky casks are evident.
Taste. Initial impressions of bittersweet chocolate and espresso roast are balanced by the resinous, slightly citrusy character of spruce. Mid-palate notes of toasted coconut and marshmallow lead into a rich heather honey sweetness. The finish is long and warming, featuring oak tannins and a touch of dark fruit.
Mouthfeel. Full-bodied and viscous with a creamy, velvety texture. Moderate carbonation. Significant but smooth alcohol warmth provides a luxurious, coating sensation without being harsh or acrid.

Wasted Degrees say “We’ve aged the beer in barrels belonging to The Scotch Malt Whisky Society and once we’ve emptied them of the beer, they’ll go back to SMWS to be filled with whisky again.
“Spruce tips are an ancient brewing ingredient, usurped by imported hops these days. Brewed in collaboration with Atholl Estates, whose forests barely a mile from the brewery provided the spruce tip harvest. The harvest was supervised by their forestry and ranger teams to ensure sustainability and plant health, as we want this to be a replicable project year-on-year.”
