Opiliones is a decadent, full-bodied Imperial Stout that masterfully integrates a complex grist with premium adjuncts. The inclusion of Peruvian Cacao Nibs and Vanilla creates a lush, chocolate ice cream-inspired core, while fresh Brazilian Tonka Beans introduce a sophisticated, perfumed aroma reminiscent of sweet spice and almond. The sensory experience is dominated by rich cocoa and velvety malt depth, supported by the intense, warming presence of its high alcohol content. It presents a harmonious balance between roasted grain bitterness and luxurious sweetness, resulting in a fragrant, multi-layered profile that evolves beautifully as it reaches its recommended serving temperature.
Appearance. Jet black and opaque (40+ SRM). Pours with a thick, persistent deep tan head. The high viscosity and alcohol content are evidenced by visible legs on the glass.
Aroma. High intensity; rich roasted malt notes of bittersweet chocolate and espresso are layered with the distinct, perfumed fragrance of Brazilian Tonka Beans, suggesting cinnamon and almond. Prominent vanilla and earthy Peruvian Cacao Nibs add a dessert-like sweetness, supported by low dark fruit esters and a clean, warming alcohol presence.
Taste. Intensely flavorful with an initial impression of chocolate ice cream. Deep malt complexity features toasted bread and dark cocoa from the Peruvian Cacao Nibs. The mid-palate reveals the spicy, almond-like character of Tonka Beans and creamy Vanilla. Bitterness is moderate, providing sufficient structure to balance the significant residual sweetness. The finish is long, sweet, and velvety with a gentle, integrated alcohol glow.
Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate. A significant but smooth alcohol warmth is present and well-integrated, enhancing the beer's richness without being sharp or solventy.
