Great Armoured One is a sophisticated Wild Specialty Beer that marries the intense acidity of tart raspberries with the structural complexity of a twelve-month slumber in wet Bordeaux red wine barrels. The high strength is masterfully integrated, providing a foundation for deep vinous fruit notes and earthy oak tannins. A vibrant fermentation profile delivers a sharp lactic brightness balanced by the dark berry character of the wine-soaked wood. This blend of seven distinct barrels offers an evolving sensory journey, moving from bright fruit-forward acidity to a lingering, dry finish enriched by subtle vanillins and leather-like wild funk.
Appearance. Deep ruby to magenta with purple highlights (SRM 20–25). Pink-tinted, fine-beaded head with low retention. Slight haze from fruit solids and long barrel maturation.
Aroma. High intensity. Dominant tart raspberry and red currant notes layered over vinous aromas of black cherry and plum. Earthy oak presents as light tobacco and leather. Moderate lactic acidity and a subtle, clean funk are present, with no hop aroma.
Taste. Initial sharp, clean lactic sourness and bright raspberry tartness. The mid-palate transitions into rich vinous fruit flavors, including red grape skins and dried berries. Significant oak influence provides earthy tannins and a hint of vanilla. Finishes bone dry with a lingering vinous aftertaste and a light, pleasant wood astringency.
Mouthfeel. Medium-light body, though perceived as fuller due to wine tannins. Moderate carbonation. Noticeable alcohol warmth that is well-integrated and smooth. Light puckering astringency from fruit skins and oak.
