Waitoa’s Golden State is a classic American IPA that captures the bright, aggressive spirit of the West Coast. Pouring a clear medium gold with a persistent white head, it opens with an intense aromatic profile of tropical fruit and pungent resin. The combination of Citra and Simcoe hops provides layers of citrus and pine, while Columbus adds a distinctive, earthy dankness. On the palate, a clean, grainy malt backbone supports an explosive bitterness that leads into a crisp, dry finish. It is a bold, hop-forward experience where vibrant fruit notes meet a lingering, resinous snap, embodying the restless energy of the sunniest state.
Appearance. Medium gold (7 SRM) with brilliant clarity; topped by a medium-sized, persistent white head with fine lacing.
Aroma. High intensity hop-forward aroma featuring bright citrus and tropical notes from Citra, coupled with piney resin from Simcoe and an underlying dank, herbal character from Columbus; very low, clean, grainy malt supports the hops.
Taste. Immediate impact of grapefruit and pine needles with a mid-palate of mango; very high bitterness that is sharp but clean, leading to a bone-dry finish with a lingering resinous aftertaste; minimal toast-like malt support.
Mouthfeel. Medium body with a smooth, crisp texture; medium-high carbonation; contains a light, well-integrated alcohol warmth consistent with its strength.
