This American IPA showcases the multifaceted nature of the Mosaic hop variety. It opens with an expressive bouquet of tropical mango and stone fruit, underscored by classic notes of resinous pine and bright citrus. The sensory experience is defined by a clean, supporting malt backbone that allows the hop oils to remain the focus. On the palate, the hop-derived flavors of ripe fruit and evergreen are met by a firm, assertive bitterness typical of the style. The result is a vibrant, well-structured ale that finishes dry and crisp, inviting another sip through its lingering fruit and resin character.
Appearance. Medium gold to deep gold (6–9 SRM) with a slight haze. Topped by a medium-sized, off-white head with excellent persistence and intricate lacing.
Aroma. High intensity hop aroma featuring a complex blend of Mosaic-driven tropical fruit like mango, stone fruit, and berries, alongside a distinct layer of resinous pine and zesty citrus. Malt remains subtle with low notes of clean, grainy sweetness.
Taste. Initial impression is a burst of hop-derived mango and citrus fruit, followed by a persistent, high bitterness. Low, clean, grainy malt provides a neutral base with a hint of toasted crackers. The finish is decidedly dry and crisp, leaving a lingering aftertaste of pine and grapefruit zest.
Mouthfeel. Medium body with a smooth texture. Moderate to high carbonation provides a refreshing bite. Very light, integrated alcohol warmth is present but subtle.
