This Straight Sour Beer showcases a sophisticated interplay between wood-aged depth and bright, local fruit. Recent Yesterdays utilizes a blend of puncheon-aged and foudre-fermented heritage base beers, creating a structured acidity that remains clean and refreshing. The addition of whole Montmorency Cherries introduces a vivid, tart red fruit profile that meshes seamlessly with the lemony lactic sourness. On the palate, a lean, crackery malt base supports flavors of almond-tinged cherry skins and citrus. The finish is bone-dry and crisp, with a very subtle oak tannin from the extended wood conditioning that rounds out the effervescent sensory experience.
Appearance. Presents a deep pink to light ruby hue (SRM 8-12) derived from the cherry addition. The beer pours with a moderate, pink-tinted white head with poor retention, typical of the style. Clarity is slightly hazy with noticeable effervescence.
Aroma. High intensity sharp, lactic sourness is dominant, complemented by a pronounced tart Montmorency Cherry character. Subtle notes of vanillin and toasted oak emerge from the foudre and puncheon fermentation. Malt is low and crackery, while hop aroma is absent.
Taste. Clean, bracing lactic sourness dominates the palate. Bright flavors of tart cherry and lemon zest are balanced by a faint bready malt presence. Hop bitterness is undetectable. The balance is heavily shifted toward acidity, finishing very dry and crisp with a lingering tart fruit aftertaste and no acetic harshness.
Mouthfeel. Medium-light body with high carbonation that creates a prickly, refreshing sensation. Perceived alcohol warmth is light and well-integrated. Crisp acidity provides a mouth-watering quality without significant astringency.
