Von Ebert Brewing Lombardy

Pilsner 4.8 º
This elegant German Pils, inspired by the Italian tradition of the Lombardy region, showcases a sophisticated blend of heritage and technique. Built upon a base of Weyermann Eraclea Pils malt, the beer offers a delicate foundation of honeyed cracker and light dough. The exclusive use of Hallertau Hersbrucker hops in both the kettle and the dry-hop stage elevates the profile beyond tradition, imparting distinctive notes of wild blueberry, fragrant jasmine, and sweet honeysuckle. It delivers a refreshing, highly attenuated experience where the noble hop bitterness is firm yet refined, culminating in a crisp, bone-dry finish that celebrates the purity of its continental ingredients.
Appearance. Straw to pale gold (2–3 SRM). Brilliant clarity with a tall, creamy, long-lasting white head and excellent lacing.
Aroma. Moderately high hop intensity featuring floral jasmine, honeysuckle, and a subtle, unique note of blueberry. Low grainy and sweet doughy malt character with a hint of honey. Very clean fermentation profile without esters or diacetyl.
Taste. Initial crispness gives way to floral and herbal hop flavors with a berry-like nuance. Malt flavor is low but presents as toasted cracker and light honey. Medium-high bitterness provides a firm balance, leading to a very dry, crisp finish. The aftertaste is clean with lingering floral hop notes and a faint minerality.
Mouthfeel. Medium-light body with moderate-high carbonation that provides a refreshing prickle. No alcohol warmth. Crisp and clean with a slight flinty sharpness in the finish; no astringency.

Another entry into our family of Italian-style Pilsners, this beer was brewed with Weyermann Eraclea Pils malt (an Italian-grown malt) and hopped exclusively with Hallertau Hersbrucker. While our other Italian-style Pilsners utilize newer varieties of Continental hops (French-grown Barbe Rouge in Pierre Le Chat and Slovenian-grown Cardinal in Agostini), we decided to go back to the basics and use one of the classic German noble varieties 100% in both the hot side and dry-hop.

“Lombardy” refers to the region in Italy where the original Italian Pils, Tipo Pils from Birrificio Italiano, was first produced.

Our beer has notes of blueberry, jasmine, and honeysuckle
