This Munich Helles from Von Ebert Brewing is a study in elegant restraint, centering on a core of Continental Pilsner malt that provides a rich, grainy-sweet foundation. The sensory experience is defined by the aroma of freshly baked bread and a soft, rounded palate that balances malt richness with a subtle, noble hop presence. Traditional German hops contribute delicate floral and spicy notes, ensuring the beer remains refreshing rather than cloying. With a clean lager fermentation and a soft, dry finish, this lager exemplifies the Pale Malty European Lager tradition, offering a highly drinkable and polished profile suitable for everyday enjoyment.
Appearance. Pale gold (approximately 4 SRM). Brilliantly clear with a persistent, creamy white head that leaves fine lacing on the glass.
Aroma. Moderate grainy-sweet malt aroma, evocative of fresh dough. Low intensity floral and spicy hop character. Exceptionally clean fermentation profile with no detectable esters or diacetyl.
Taste. Initial moderately malty impression with a soft, grainy-sweet flavor. Low to medium-low bitterness balances the malt without becoming sharp. Subtle herbal and spicy hop flavors are present but secondary to the malt. The finish is soft and dry, with a lingering, clean malty aftertaste.
Mouthfeel. Medium body with a smooth, well-lagered character. Moderate carbonation. Very low alcohol warmth, consistent with its sessionable strength, and entirely free of astringency.

Having spent a fair amount of time in Munich and Bavaria in general, I really came to appreciate just what this style of beer is, and what it means to the people that love it and consume it regularly. The Germans take beer very seriously and Helles is no exception.
Complexity in light beer is hard to achieve for a lot of brewers. For us, we wanted to let the malt truly be “experienced”. This starts by choosing high quality European base malts.
Enhancing the malt flavor comes next. This is done by performing a decoction, where a portion of the mash is drawn off and boiled, then returned back to the mash to raise the temperature up to the next mash rest. This produces a flavor profile that really can’t be re-created any other way. Imagine a more pronounced malt flavor, without sweetness.
To round this out the hop flavor and aroma need to be present but not overwhelming or too dominant. We believe that Hallertau Hersbrucker hops fit the bill for our take on this Bavarian gem.
