This fresh-hopped Hazy IPA captures the raw essence of the harvest, layering vibrant, resinous oils over a pillowy, golden grain bill. The sensory profile is headlined by an intense burst of fresh Mosaic hops, delivering distinctively dank, berry-like notes and floral greenery. These meld seamlessly with the tropical punch of Citra and the stone-fruit character of Idaho 7, while Simcoe provides an underlying foundation of earthy pine and grapefruit zest. A soft, luminous haze and meringue-like head lead into a velvet-like texture. The palate balances lush tropical esters with a restrained, smooth bitterness, finishing juicy and remarkably clean, showcasing the fleeting intensity of whole-cone hops.
Appearance. Luminous straw to light gold (4-6 SRM) with a deep, opaque haze that gives the beer a vibrant glow. Topped by a dense, rocky, white meringue-like head with excellent retention and thick, decorative lacing.
Aroma. High intensity and profoundly hop-forward. Punchy aromas of ripe mango and grapefruit from Citra and Simcoe are heightened by the resinous, dank, and blueberry-like perfume of fresh Mosaic. Idaho 7 contributes subtle notes of apricot and black tea. Background malt is neutral and lightly bready, while fermentation esters are cleanly fruity and supportive.
Taste. An immediate explosion of tropical fruit, featuring pineapple, tangerine, and mixed berries. The fresh Mosaic adds a green and resinous depth that distinguishes it from standard versions. Low bready malt flavor provides a soft platform for the hops. Bitterness is moderate but perceived as smooth rather than sharp. The finish is off-dry and juicy with a lingering citrus zest aftertaste.
Mouthfeel. Medium-full body with a soft, creamy, and pillowy texture. Carbonation is moderate, enhancing the fruity lift. A very light, well-integrated alcohol warmth is present at 7% ABV, with no astringency or hop burn.
