Antoine is a graceful Saison that captures the essence of a rustic farmhouse garden. The puncheon-aged mixed culture base provides a bright, tart acidity that beautifully complements the delicate perfume of Pink Rose Petals and the soothing, herbal character of Egyptian Chamomile. Notes of Kentucky Bluegrass impart a distinctively fresh, green, and earthy quality that underscores the beer’s wild character. With its highly attenuated profile, the palate is exceptionally dry, showcasing a blend of floral elegance and spicy yeast phenolics. This effervescent ale balances its complex botanical layers with a light, grainy malt backbone, finishing crisp and refreshing.
Appearance. Pale gold with a slight haze; features a dense, rocky white head with excellent retention and delicate Belgian lace.
Aroma. Moderate to high intensity with a complex bouquet of floral rose and herbal Egyptian Chamomile. Fresh Kentucky Bluegrass provides an earthy, meadow-like quality. Fermentation character includes peppery spice and a noticeable lactic tartness from the mixed culture aging.
Taste. Initial impression is bright and tart, leading into a rustic, grainy malt core. Floral notes of rose and herbal chamomile are prominent but integrated with a spicy, peppery yeast character. Very high attenuation results in a bone-dry finish with a lingering floral and earthy aftertaste. Bitterness is low, as the mild acidity provides the necessary balance.
Mouthfeel. Light body with very high, effervescent carbonation. No alcohol warmth is perceived; the mouthfeel is crisp and clean with a subtle, drying quality from the botanicals.
