This decadent Imperial Stout offers a rich sensory journey inspired by traditional Mexican Mole Poblano. An intense base of dark roasted malts delivers deep notes of molasses and bittersweet cocoa, layered with the sticky sweetness of dates and a hint of redcurrant fruitiness. The 11.5% ABV provides a significant, well-integrated warmth that complements a gentle smokiness and a lingering prickle of chili heat. Nuances of anise and liquorice add complexity to the profile, while the high viscosity ensures a luscious, indulgent experience. It is a masterful balance of spicy, savory, and sweet elements, finishing with a persistent, roasty depth.
Appearance. Jet black and opaque (40+ SRM). Pours with a thick, dark tan head with moderate retention. High viscosity is evident through visible legs on the glass.
Aroma. High intensity with a complex blend of bittersweet cocoa, rich molasses, and deep roast. Subtle smokiness is layered with esters of dried fruit like dates and redcurrants. A noticeable alcohol presence is accompanied by herbal anise and a faint, spicy chili character.
Taste. Initial flavors of dark chocolate and treacle-like molasses lead into complex dried fruit notes. Firm bitterness from roasted grains and hops provides balance against a moderate sweetness. The chili adds a gentle, warming character rather than aggressive heat, melding with light smoke and liquorice in a long, bittersweet finish.
Mouthfeel. Full-bodied and chewy with a velvety, sumptuous texture. Carbonation is low to moderate. A smooth, noticeable alcohol warmth is present without being harsh, complemented by a subtle creaminess.
