This Imperial Stout presents a masterful intersection of spice and barrel-aged depth. A 25-month maturation in White Moscatel and Bourbon casks yields a luscious profile where the spicy snap of rye malt meets the exotic perfume of green cardamom pods. Rich layers of dried figs and star anise dominate the mid-palate, while the influence of the Moscatel barrels introduces refined notes of peach and honeyed grapes. Bourbon oak imparts smooth vanilla and a deep charred sweetness. It is a bold, velvety experience, balancing intense roasted malts with vibrant botanical spice and a warming, complex finish.
Appearance. Jet black and opaque (SRM 40+). Pours with a dense, persistent deep tan head; high viscosity is apparent in the glass with visible legs and thick lacing.
Aroma. High intensity. A complex bouquet of roasted coffee and dark chocolate is layered with the pungent, herbal citrus of green cardamom and the deep, jammy sweetness of dried figs. Pronounced barrel character adds vanilla, oak, and a vinous, fruity White Moscatel note. Subtle star anise and a spicy rye graininess emerge as it warms.
Taste. Initial impression of massive dark roasted grain and spicy rye. Mid-palate, the lively warmth of cardamom and succulent fig takes center stage, supported by dark fruit esters and licorice-like star anise. Bourbon-derived vanilla and a distinctive stone fruit peach flavor from the Moscatel casks provide a sophisticated counterpoint to the firm roasted bitterness. The finish is long, complex, and warming with a lingering bittersweet chocolate aftertaste.
Mouthfeel. Full to very full-bodied with a chewy, velvety, and luscious texture. Carbonation is low to moderate. A significant but smooth alcohol warmth is present and well-integrated. No harsh astringency despite the heavy rye and spice profile.
