This decadent Imperial Stout offers a masterclass in sensory layering, where coconut flakes added at four distinct stages create a dominant, tropical creaminess that melds seamlessly with the base beer’s roasted core. Eight months in bourbon barrels imparts a sophisticated structure of charred oak, toffee, and smooth vanilla. The profile is defined by intense aromas of espresso and bittersweet cocoa, while the palate reveals a rich tapestry of dark chocolate and toasted coconut. A gentle, integrated alcohol warmth from the 11.2% ABV glows through the finish, balanced by a lingering bitterness of roasted grains and wood tannins, delivering a truly luxurious, multi-dimensional experience.

Appearance. Jet black (SRM 40+) and completely opaque. It pours with a thick, deep tan head that shows moderate to low retention, common in high-gravity beers with coconut oils, leaving viscous legs on the glass.

Aroma. High intensity. Dominated by sweet, toasted coconut and rich bourbon-soaked oak. Underneath, deep roasted malt notes of espresso, dark chocolate, and black licorice emerge. Subtle toffee sweetness and light dark fruit esters like prunes are present; hop aroma is absent.

Taste. Intensely flavored and complex. Initial impressions of sweet coconut and toffee transition into dark cocoa and strong espresso roast. The bourbon barrel aging adds layers of vanilla and charred oak, providing a sturdy counterpoint to the residual sweetness. Bitterness is moderate-high but masked by the dense body. The finish is long and warming with lingering notes of dark chocolate and wood.

Mouthfeel. Very full-bodied with a chewy, velvety, and luscious texture. Carbonation is low. A smooth, gentle alcohol warmth is prominent but well-integrated, lacking any harshness. Characterized by high viscosity and a notable creaminess on the palate.
