This Wild Specialty Beer is a masterclass in barrel-matured complexity, showcasing a vibrant interplay between stone fruit and oak. A base featuring wheat and oats provides a soft foundation for assertive lactic acidity, which has evolved through ten months of conditioning in Chardonnay barrels. Fresh peaches dominate the sensory profile, while the wood influence contributes sophisticated nuances of gooseberry, strawberry, and a surprising hint of white chocolate. At 9.2% ABV, the alcohol warmth is elegantly integrated, supporting a rich, multi-layered experience that balances sharp sourness with the luscious, sun-ripened depth of the fruit and vinous barrel character.
Appearance. Deep gold to light amber (7-10 SRM) with a soft orange tint; hazy to opaque from the fruit and heavy use of wheat and oats. Low white head with poor retention, typical of high-acid, high-ABV wild ales.
Aroma. High intensity of ripe, juicy peach and nectarine. The fermentation profile is clean but sharply lactic, complemented by vinous Chardonnay notes including gooseberry and green strawberry. Very low grainy wheat malt aroma, with no hop character. A subtle creamy sweetness reminiscent of white chocolate emerges from the oak interaction.
Taste. Initial impression is a sharp, refreshing lactic tartness immediately followed by dominant fresh peach flavor. The mid-palate introduces complex barrel-derived fruitiness, specifically gooseberry and white grape, balanced by a faint vanilla-like white chocolate note. Malt flavors are minimal and bready. Bitterness is nearly absent, with the acidity and barrel tannins providing the structure. The finish is long, bone-dry, and intensely fruity with a lingering acidic snap.
Mouthfeel. Medium body with a silky, creamy texture derived from the oats. Carbonation is moderate-high, creating a lively prickle on the tongue. A noticeable, well-integrated alcohol warmth is present. Light oak and fruit skin astringency contributes to a crisp, dry mouthfeel.
